Beer Braised Cabbage

This simple, flavorful recipe can be served on its own, or as a side dish for meat or fish. In the video above, it is served with pork belly and a red cabbage slaw.

Ingredients

  • 1​ ​head​ ​green​ ​cabbage
  • Salt
  • 4​ ​tablespoons ​butter, divided
  • 1​ ​clove​ ​garlic, sliced
  • 2 tablespoons capers (optional)
  • 1 bottle (12​ ​ounces) ​Modelo​ ​Negra​ ​beer

Directions

  1. Peel​ away ​the​ ​outer​ ​leaves​ ​of​ ​the​ ​cabbage.​ ​​ Turn​ ​the​ ​cabbage​ ​core​ ​side​ ​up​ ​and​ ​quarter​ ​the cabbage​ ​so​ ​that​ ​each​ ​section​ ​has​ ​a​ ​part​ ​of​ ​the​ ​core​ ​in​ ​it.​ ​​ ​Salt​ ​all​ ​sides​ ​of​ ​the​ ​cabbage​ ​liberally.
  2. Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the cabbage quarters cut-side down and brown well, about 4 to 5 minutes. Turn the cabbage pieces onto the other cut side and brown for 4 to 5 minutes. Turn the cabbage onto the rounded side, add the garlic and capers and cook to soften a bit, about 1 minute. Add the beer and use a large spoon to spoon the beer over the cabbage as it simmers. When the liquid has thickened to a sauce-like consistency, after 4 to 5 minutes, add the remaining 2 tablespoons of butter. As the butter melts, continue to spoon the liquids over the cabbage for 1 to 2 minutes longer, by which time the cabbage should be tender.
  3. Transfer the cabbage to individual plates, spoon the sauce over, and serve.
