This simple, flavorful recipe can be served on its own, or as a side dish for meat or fish. In the video above, it is served with pork belly and a red cabbage slaw.
Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the cabbage quarters cut-side down and brown well, about 4 to 5 minutes. Turn the cabbage pieces onto the other cut side and brown for 4 to 5 minutes. Turn the cabbage onto the rounded side, add the garlic and capers and cook to soften a bit, about 1 minute. Add the beer and use a large spoon to spoon the beer over the cabbage as it simmers. When the liquid has thickened to a sauce-like consistency, after 4 to 5 minutes, add the remaining 2 tablespoons of butter. As the butter melts, continue to spoon the liquids over the cabbage for 1 to 2 minutes longer, by which time the cabbage should be tender.
Transfer the cabbage to individual plates, spoon the sauce over, and serve.
