Leo serves his blackened Salmon on top of a fresh salad. Try it on top of salad, on its own, or even with roasted veggies!
Ingredients
Fresh, never frozen Salmon (must be fresh), skin removed, 1 fillet per person
Leo's Special Spice Blend (equal parts Oregano, Rosemary, Onion Powder, Garlic Powder, and Black Pepper)
Directions
Rub spices in one side. Grill the seasoned side until it is seared, about 3 minutes. Turn over and cook for 1 minute. Remove from heat and place on plate. Cover with tin foil and let rest for 5 minutes to steam and finish cooking.
