Homemade Whole Wheat Muffin Mix
Muffin Mix
Ingredients
- 6 C whole wheat flour
- 2 C all purpose flour
- 2 1/2 C sugar
- 3 TBSP baking powder
- 2 tsp salt
- 2 tsp nutmeg
- 1 TBSP cinnamon
Directions
- Mix all ingredients in a large bowl and store in a dry container or plastic bag.
Wet Ingredients
Ingredients
- 2 C mix (from above)
- 2/3 C milk
- 1 egg
- 2 TBSP canola oil
- 2 TBSP plain yogurt, sour cream, mashed banana or pumpkin puree
- ½ C berries or diced fruit
Directions
- Place 2 C muffin mix in a bowl and create a well in the center. Combine milk, egg, oil and yogurt in a separate bowl. Pour wet ingredients into the well and mix until nearly combined. Add berries or diced fruit and stir until just incorporated. Place a rounded TBSP of batter in each cup of a greased muffin tin. Bake at 400 for 10-12 minutes till the tops spring back when lightly touched. (This makes 24 mini muffins.)
