Homemade Whole Wheat Muffin Mix

Muffin Mix

Ingredients

  • 6 C whole wheat flour
  • 2 C all purpose flour
  • 2 1/2 C sugar
  • 3 TBSP baking powder
  • 2 tsp salt
  • 2 tsp nutmeg
  • 1 TBSP cinnamon

Directions

  1. Mix all ingredients in a large bowl and store in a dry container or plastic bag.

Wet Ingredients

Ingredients

  • 2 C mix (from above)
  • 2/3 C milk
  • 1 egg
  • 2 TBSP canola oil
  • 2 TBSP plain yogurt, sour cream, mashed banana or pumpkin puree
  • ½ C berries or diced fruit

Directions

  1. Place 2 C muffin mix in a bowl and create a well in the center. Combine milk, egg, oil and yogurt in a separate bowl. Pour wet ingredients into the well and mix until nearly combined. Add berries or diced fruit and stir until just incorporated. Place a rounded TBSP of batter in each cup of a greased muffin tin. Bake at 400 for 10-12 minutes till the tops spring back when lightly touched. (This makes 24 mini muffins.)
