WHOLE WHEAT BLACKBERRY MUFFINS
We went wild blackberry picking last summer and are just now using up the last of our frozen blackberries. Best of all, when we eat them in muffins or oatmeal my kids remember the fun we had harvesting them.
CHICKEN AND CHEESE QUESADILLAS
Fast. Easy. Yummy. What’s not to like? Best of all, it’s easy to round out your meal with whatever vegetables you have on hand.
FRITTATA
I make my frittatas more vegetable heavy than most recipes indicate, but part of their appeal is that they’re so easily customized. When I have a few odds and ends of vegetables in the fridge and not a lot of time to make dinner there’s a good chance we’ll be eating a frittata. This frittata had a left over baked potato, diced red and green bell peppers, and sliced spinach and kale.
GREEN SMOOTHIES
My kids love fruit smoothies and I love throwing in handfuls of spinach and kale to give an extra boost. This fruit smoothie had soy milk, kale, banana, orange, and frozen peaches, plums and blackberries. I never use a recipe, but just roll with whatever we have in our fridge and freezer.
LAMB TAGINE WITH CHICKPEAS AND APRICOTS
This was a delicious new recipe that we found here. It was simple to make and exposed my kids to excellent flavors. We served it on whole wheat couscous and I read the reviews from other home cooks before making it to get a feel for what people did and didn’t like about the recipe and its method of preparation. MEXICAN CHICKEN SALAD
This is a family favorite and a meal that’s easy to make for company. On the bottom of our bowls is a warm corn tortilla topped with cilantro lime brown rice, chopped lettuce, grilled chicken, a mixture of black beans, corn, tomato and diced red bell pepper, and top it with cotija cheese and either a creamy chipotle dressing or lime vinaigrette.
LENTILS, RICE AND CARAMELIZED ONIONS (MUJADARA)
This a tasty Middle Eastern dish that we eat about once a month. The recipe we follow comes from the cookbook Veganomicon. It’s a delicious dish from simple ingredients and once you add enough salt it tastes magical.
WHOLE WHEAT PANCAKES
Our pancakes are usually topped with cooked mashed fruit, diced fresh fruit or real maple syrup. They’re an easy, healthy way to start our day.
