Neil's Bigleaf Maple Syrup

When Neil started telling people that he was going to tap our west coast trees for syrup, no one believed it could be done. “You can’t tap these trees!” and “Ain’t no sugar in Bigleaf sap,” were common responses. Five years and many of gallons later, we can definitively state that you can indeed tap Bigleaf Maples, and you can tap them here on the West Coast. And it tastes delicious.
