Onion and Bacon Jam
Ingredients
- 1 pound Bacon (end pieces)
- 2 yellow onions, peeled and chopped
- 1/4 cup Garlic, peeled and chopped
- 3/4 cup Brown sugar
- 1/3 cup Honey or maple syrup
- 1/3 cup Coffee, strong
- 1/3 cup Balsamic vinegar
- 2 tablespoons Soy sauce
- 1 teaspoon Black pepper
Directions
- In a sauce pan, combine all ingredients. Bring to a boil and then simmer on medium heat, stirring from time to time.
- Cook for approximately one hour, you want all the liquid to be evaporated. You can see a little coloration starting.
- Cool off a bit and then place in food processor. Process from rough chop to fine, depending on your liking.
- Place into jars and cool off. The fat of the bacon should come back up and kind of seal the jar.
- When completely cooled, place the lids on the jars.
- Serve with crackers, charcuterie, and cheese board. Is also wonderful as a side condiment for grilled meat.
