Onion and Bacon Jam

Ingredients

  • 1 pound Bacon (end pieces)
  • 2 yellow onions, peeled and chopped
  • 1/4 cup Garlic, peeled and chopped
  • 3/4 cup Brown sugar
  • 1/3 cup Honey or maple syrup
  • 1/3 cup Coffee, strong
  • 1/3 cup Balsamic vinegar
  • 2 tablespoons Soy sauce
  • 1 teaspoon Black pepper

Directions

  1. In a sauce pan, combine all ingredients. Bring to a boil and then simmer on medium heat, stirring from time to time.
  2. Cook for approximately one hour, you want all the liquid to be evaporated. You can see a little coloration starting.
  3. Cool off a bit and then place in food processor. Process from rough chop to fine, depending on your liking.
  4. Place into jars and cool off. The fat of the bacon should come back up and kind of seal the jar.
  5. When completely cooled, place the lids on the jars.
  6. Serve with crackers, charcuterie, and cheese board. Is also wonderful as a side condiment for grilled meat.
