Directions
Preheat an outdoor grill. Rub the corn with the olive oil and steak seasoning. Put the ears of corn on the grill, turning occasionally, until lightly browned, 3 to 5 minutes. Set the corn aside to cool.
Chipotle Honey Lime Butter
Ingredients
4 ounces (1/2 cup) butter, softened
2 tablespoons honey
1 teaspoon chopped chipotle in adobo, or to taste
Freshly squeezed juice of 1/2 lime
Minced chives, for serving (optional)
Directions
Combine the butter, honey, chipotle, and lemon juice in a mini food processor and pulse to blend. Alternatively, stir the ingredients together in a bowl.
For serving, cut the corn kernels off the cobs. Combine the corn and 2 to 3 tablespoons of the chipotle butter in a medium skillet and cook over medium heat until warmed through and the corn is evenly coated in the butter, 3 to 4 minutes. Spoon the corn onto individual plates and sprinkle the chives over.
