2 quarts greens (arugula, kale, mache, spring mix etc.)
1/4 c lemon vinaigrette
1 c garden ranch
1 c roasted cured tomatoes
1/2 c cheese curds
Roasted Cured Tomatoes
Ingredients
2 sliced green tomatoes
1 pint cherry tomatoes sliced
1/4 c canola oil
2 c olive oil
Salt and pepper to taste
Directions
Toss tomatoes in canola oil and seasonings
Roast at 350 degrees for 5 minutes
Cool and soak in olive oil (the longer they soak, the more flavorful they will be)
Lemon Vinaigrette
Ingredients
1/2 c lemon juice
1/4 c sugar
2 c oil
1 tsp dijon mustard
1 tsp salt
Directions
Combine all ingredients except for olive oil
Slowly add in the oil by whisk continuously
Garden Ranch Dressing
Ingredients
1/2 quart cream cheese
1 c ranch dressing
1 tbl salt
1 tbl granulated garlic
1 tbl granulated onion
Directions
Add all ingredients to bowl and whisk until combined
Assemble Salad:
Toss greens in lemon vinaigrette. Place garden ranch on bottom of plate or bowl. Arrange greens on top of the ranch. Garnish with cured tomatoes and cheese curds.
