Cured Tomato Garden Salad
Ingredients
- 2 quarts greens (arugula, kale, mache, spring mix etc.)
- 1/4 c lemon vinaigrette
- 1 c garden ranch
- 1 c roasted cured tomatoes
- 1/2 c cheese curds
Roasted Cured Tomatoes
Ingredients
- 2 sliced green tomatoes
- 1 pint cherry tomatoes sliced
- 1/4 c canola oil
- 2 c olive oil
- Salt and pepper to taste
Directions
- Toss tomatoes in canola oil and seasonings
- Roast at 350 degrees for 5 minutes
- Cool and soak in olive oil (the longer they soak, the more flavorful they will be)
Lemon Vinaigrette
Ingredients
- 1/2 c lemon juice
- 1/4 c sugar
- 2 c oil
- 1 tsp dijon mustard
- 1 tsp salt
Directions
- Combine all ingredients except for olive oil
- Slowly add in the oil by whisk continuously
Garden Ranch Dressing
Ingredients
- 1/2 quart cream cheese
- 1 c ranch dressing
- 1 tbl salt
- 1 tbl granulated garlic
- 1 tbl granulated onion
Directions
- Add all ingredients to bowl and whisk until combined
- Assemble Salad: Toss greens in lemon vinaigrette. Place garden ranch on bottom of plate or bowl. Arrange greens on top of the ranch. Garnish with cured tomatoes and cheese curds.
