Malaysian Lamb Satay

5 lbs ground lamb
1 cup cilantro, chopped
1/4 cup lemon grass, chopped
1 onion, diced
1/2 cup fish sauce
1/3 cup sugar
6 cloves garlic, minced
3 tbs red curry paste
2 tbs lime kaffir leaf, chopped
2 tbs turmeric
1 tbs salt

  1. Dice onions and chop up cilantro, lemon grass and lime leaves. Mix everything together, thuroughly, and let rest. 
  2. Preheat the grill to 400ºF. 
  3. While the grill heats, shape the lamb mixture into oblong meatball shape, roughly 2-3 inches long. Pro Tip: use skewers that have been soaked overnight in water to shape and cook.
  4. Place each skewer on the grill, turn every few minutes until browned and fully cooked. 
  5. Remove and serve.
