Vios Hummus

 

Chickpeas
Baking Soda
Garlic
Carrots
Celery
Lemon
Toasted cumin
Tahini paste
Salt
Olive Oil


  1. Soak dried chickpeas overnight with baking soda and water, to help them break down.
  2. When you’re ready to prepare your hummus, set aside the water and cook chickpeas with garlic, carrots and celery.
  3. Add chickpeas and fresh garlic to the food processor.
  4. Smash more garlic and add to the food processor.
  5. Juice lemmons.
  6. Add 2 tablespoons lemon juice, 1 tablespoon toasted cumin, half a cup of tahini paste, and 2 teaspoons of salt to the food processor.
  7. Next, add some of the soaking liquid from the night before and olive oil and blend for 3 minutes.
  8. Season to taste and pair with an assortment of veggies and pita bread.
