Peel and core the apples
Roll puff pastry dough and make 8 squares of 3 inches by 3 inches
Brush egg wash on the puff pastry
Place apple in middle of square and wrap it with dough, make it tight and sticky to the apple
Brush the outside of the dough also with egg wash
Fill apple center with blue cheese
Bake on sheet pan with parchment paper for 40 minutes at 375 F
Serve warm with a side salad or a drizzle of jam or syrup
