Washington Apple Cake

Cake

Ingredients

  • 2 Cups Chopped Apples (Granny Smith, Jonagold, any good baking apple, sautéed until soft in a small amount of butter)
  • 2 ½ Cups All-Purpose Flour
  • 2 cups Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 1 ½ Cups Applesauce
  • ¾ Cup Oil (Canola)
  • 4 Eggs
  • ½ Cup Walnuts (Optional)

Directions

  1. Preheat oven to 350 degrees. Prepare two 8” or 9” cake pans with parchment on the bottom and spray with cooking release spray. Put all dry ingredients in a mixer bowl and mix on low until blended. Mix all the wet ingredients and add to the dry and blend until smooth. Add apples and if you like, nuts. Blend until smooth. Pour into pans and bake for 25 to 30 minutes.
  2. Cool in pans for 10 minutes and remove from pans to completely cool.

Frosting

Ingredients

  • 6 Ounces of Cream Cheese, softened
  • ½ Cup (1 Stick) Butter, softened
  • 2 teaspoons Vanilla
  • 4 ½ Cups Confectioner Sugar

Directions

  1. Cream the cream cheese and butter with vanilla until light and fluffy. Slowly add the sugar until smooth.
