Dough

Ingredients

  • 1.5 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 4 ounces cold butter cut into small cubes
  • 1/2 cup cold water

Directions

  1. Pre heat oven between 375 F to 400 F.
  2. In a food processor, place four, salt, baking powder, and cold butter. Process on pulse until the butter is very finely mixed.
  3. Add the very cold water little by little with food processor still on pulse. At one point the dough will come together. Stop at this point, do not over mix.
  4. Form a ball with the dough and let it rest at least for an hour, best overnight.
  5. If you rest the dough overnight, before rolling it, let it sit at room temperature for an hour, it will be easier to roll and not break.

Fruit Mix

Ingredients

  • 2 cups fresh blueberries, washed
  • 1 cup fresh raspberries, washed
  • 1 cup fresh blackberries, washed
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • Juice and zest from one lemon
  • Turbinado sugar to sprinkle

Directions

  1. In a large bowl, mix all berries with sugar, cornstarch, lemon zest, and lemon juice.
  2. Roll the dough to 1/8 inch and cut circles out of it (with a plate or cookie cutter) of 5 to 6 inches of diameter.
  3. Place the dough circles on a baking sheet pan with parchment paper or silicon pad.
  4. Divide the berries mix and place it in the center of each dough circle leaving one inch free of berries around.
  5. Fold the dough over the berries all around. You should have a "flat" pie with dough around and berries in the middle.

Egg Wash

Ingredients

  • 1 whole egg, beaten
  • 1 tablespoon milk

Directions

  1. Mix together the egg and milk until well blended.
  2. Brush the dough with the egg wash mixture. Sprinkle the turbinado sugar on top.
  3. Bake in the oven at 375 to 400 F for 40 to 50 minutes until there is a nice golden color on the dough.
  4. Cool off and serve individually topped with whipped cream or ice cream.

Notes

The dough has no sugar in it, therefore you could use this recipe to make it savory with caramelized onions, cheese, etc. Just make sure to omit the turbinado sugar during the preparation.
