Skagit Hash
Ingredients
- 3 cups pre-cooked red potatoes, thinly sliced, seasoned and grilled in oil
- 1 tablespoon minced garlic
- 1/2 cup diced red onion
- 1/2 cup button mushrooms
- 1/2 cup diced roma tomatoes
- 1/2 cup chopped broccoli florets
- 2 cups baby spinach
- Garnish: Feta and mozzarella cheese
Directions
- Heat a little oil in a hot skillet with garlic. Once hot, add all vegetables and sauté until tender. Scoop potatoes onto plate, top with vegetable mixture and add feta and mozzarella cheese.
