3 cups pre-cooked red potatoes, thinly sliced, seasoned and grilled in oil
1 tablespoon minced garlic
1/2 cup diced red onion
1/2 cup button mushrooms
1/2 cup diced roma tomatoes
1/2 cup chopped broccoli florets
2 cups baby spinach
Garnish: Feta and mozzarella cheese
Directions
Heat a little oil in a hot skillet with garlic. Once hot, add all vegetables and sauté until tender. Scoop potatoes onto plate, top with vegetable mixture and add feta and mozzarella cheese.
