Old Fashioned Onion Rings

This is an actual recipe from a former employee of a popular drive-in restaurant. Crispy-coated onion rings like the pros make!

Ingredients

  • 1 large onion, cut into 1/4-inch slices
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¾ cup dry bread crumbs
  • 1 quart oil for frying, or as needed

Directions

  1. Slice onion into 1/4-inch-thick rings.

  2. Prepare breading station by setting out 1 wide, shallow dish. Whisk flour, baking powder, and salt together. Place bread crumbs on a plate and set aside.

  3. Dip each onion ring into the flour mixture, turning several times until fully coated with flour.

  4. Wisk the egg and milk to the remaining flower mixture

  5. Dip each onion in the egg mixture and turn it until coated. Lift the onion and shake gently so excess liquid drips back into the dish. Place on wire rack

  6. Place onion in the bread crumbs and turn several times to coat, scooping crumbs over the ring if necessary.

  7. Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).

  8. Deep-fry 3 to 4 onion rings in the preheated oil until golden brown, 2 to 3 minutes. Place fried onion rings on the rack while you deep-fry the remaining rings.
