Beer Battered Onion Rings

Ingredients

  • 1½ C all-purpose flour
  • ½ C cornstarch
  • ½ tsp baking soda
  • 1¼ tsp salt
  • 1/8 tsp cayenne
  • 1 tsp sweet paprika
  • 1 egg, beaten
  • 12 oz beer
  • 2-3 medium sized sweet onions
  • Canola oil
  • All-purpose flour

Directions

  1. Mix flour through paprika in a bowl till combined. Add egg and beer and whisk till the lumps are gone. Cut the bottom and top of the onions and remove the outer layer of the onion. Slice the onion into 1/3” thick slices and separate into rings. Pour enough canola oil in a deep stockpot to 2" canola oil. Heat the oil over medium-high heat to 375°. Place 7-8 onion rings in a plastic bag and add flour to the bag. Close the bag and shake till the onions are covered with flour. Place floured onion rings the bowl of batter and using a fork, turn it over till they’re fully covered. Carefully place the onion ring into the hot oil and fry till the sides are beginning to turn dark brown. Flip over and fry for 1 more minute. Remove from the oil and place on paper towels. Serve immediately or keep warm in a 200° oven.

Chipotle dipping sauce

Ingredients

  • 1 C mayonnaise
  • 2 chipotle chiles in adobo sauce
  • 2 TBSP ketchup
  • 1 TBSP lime juice

Directions

  1. Whisk all ingredients together in a bowl.
