Candied Pepitas

Ingredients

  • 3 cups pepitas
  • 50 grams of water
  • 90 grams of sugar
  • 10 grams of glucose
  • 6 grams of salt
  • 10 grams of turbinado sugar
  • 1 teaspoon of chili powder
  • Tiny pinch of Cayenne
  • Tiny pinch of Ancho Powder

Directions

  1. Simmer water, sugar, glucose, stir in nuts and chili powders.
  2. Remove from heat, stir in salt and sugar.
  3. Bake on a silpat mat in a 350 degree oven until golden brown, break apart when cool.
