Ingredients
3 cups pepitas
50 grams of water
90 grams of sugar
10 grams of glucose
6 grams of salt
10 grams of turbinado sugar
1 teaspoon of chili powder
Tiny pinch of Cayenne
Tiny pinch of Ancho Powder
Directions
Simmer water, sugar, glucose, stir in nuts and chili powders.
Remove from heat, stir in salt and sugar.
Bake on a silpat mat in a 350 degree oven until golden brown, break apart when cool.
