Candied Pepitas
Ingredients
- 3 cups pepitas
- 50 grams of water
- 90 grams of sugar
- 10 grams of glucose
- 6 grams of salt
- 10 grams of turbinado sugar
- 1 teaspoon of chili powder
- Tiny pinch of Cayenne
- Tiny pinch of Ancho Powder
Directions
- Simmer water, sugar, glucose, stir in nuts and chili powders.
- Remove from heat, stir in salt and sugar.
- Bake on a silpat mat in a 350 degree oven until golden brown, break apart when cool.
