Cake Doughnut Holes

Ingredients

  • Vegetable oil, for frying
  • 3 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/3 teaspoon ground or grated nutmeg
  • 1 teaspoon salt
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 1 egg
  • About 1 cup powdered sugar, for serving

Directions

  1. Heat oil in a deep fryer or put a few inches of oil in a large, deep saucepan (it should come no more than halfway up the sides of the pan) and heat to 360-375 F over medium heat.
  2. While the oil is heating, combine the flour, granulated sugar, baking powder, nutmeg, and salt in a large bowl and whisk to blend. Whisk in the milk and melted butter, stirring until blended. Add the egg and whisk just until it is well incorporated; avoid overmixing.
  3. When the oil is heated, use a small ice cream scoop to scoop the dough and gently drop it into the hot oil, making 6 or so at a time. Cook until dark golden brown, 3 to 5 minutes. Remove them from the oil and allow to drain while frying the remaining doughnut holes.
  4. Put the powdered sugar in a large bowl, add the doughnut holes, and toss to evenly coat them before serving.
