Sage Roasted Ama Rosa Potatoes with Espelette Aioli

Ingredients: 

Ama Rosa Potatoes, cut in half length wise...................1 lbs.

Olive oil...............................................................2 Tbsp.

Fresh Sage leaves....................................................as needed

Salt and Pepper......................................................to taste

 

Pre-heat oven to 425 degrees. Cut Ama Rosa potatoes in half length wise Toss with

olive oil and salt and pepper. Place sage leaf on cut side then place cut side down

on sheet pan and bake for 20 min. or until tender. Remove from oven, serve warm

with Aioli.

 

Espelette Aioli:

Olive oil Mayo.......................................................1 cup

Espelette chili pepper*...............................................1 tsp.

Garlic, Fresh, minced...............................................1 tsp.

Salt/black pepper....................................................to taste

Lemon Juice...........................................................2 tsp.

 

Combine all ingredients.

*Can substitute smoked paprika
