- 4 peeled pears … cut in half (8 portions)
- 1 bottle white wine
- 1 c white sugar
- 1 stick of cinnamon
Combine all ingredients except pears in sauce pan. Simmer until sugar is disolved and add pears. Continue to simmer for 30 minutes. After you remove the pears, continue to simmer mixture to cook down to glaze.
- 1, 11 inch pastry shell (1 pound pastry crust)
Place in Food Processor:
- 2 cups toasted almonds (process until finely ground)
- 1 cup white sugar
- 2 tblsp flour
- 1 cup butter
- 2 eggs (place eggs in separate bowl prior to adding them into cuisinart to ensure no shells)
- 2 tsp. almond extract
- 2 tsp. real vanilla
- 2 tblsp rum
Process until smooth & creamy. Spread almond paste evenly in the 11 inch pastry crust in a fluted pan. Top with sliced pears.
Bake at 350° for 1 hour 5 minutes in the OVEN. Glaze with apricot jelly or reduce wine to make a glaze.
