Good Morning' Granola

Ingredients:

- 4 C old-fashioned oats
- ½ C walnuts, chopped
- ¼ C pepitas
- ½ C dried apricots, cut into fourths
- ½ C craisins
- ¼ C canola or coconut oil
- ½ C honey
- ¼ tsp salt

Preheat oven to 350. In a large bowl, stir oats through craisins to combine. In a 2 C. glass measuring cup, mix honey, oil and salt with a mixer until emulsified. Pour honey mixture over oats and mix well with a spoon until evenly distributed. Spread oats evenly on a rimmed baking sheet that has been sprayed with nonstick spray. Bake for 15 minutes, until golden brown. Allow to cool completely before breaking into chunks and storing in an airtight container.
